Ingredients

  • 2 large ripe tomatoes
  • 4 eggs
  • 1/4 cup shredded Cheddar cheese
  • 1/4 cup soft bread crumbs
  • 1/8 teaspoon pepper
  • 1/4 teaspoon parsley flakes
  • 2 tablespoons melted butter

Instructions

  1. Cut tomatoes in halves crosswise; scoop out pulp, leaving shells intact.
  2. Invert the tomato shells to drain excess moisture.
  3. Place the tomato shells in an 8-inch casserole dish.
  4. Break one egg into each tomato shell.
  5. Sprinkle shredded Cheddar cheese, bread crumbs, pepper, and parsley flakes over the eggs.
  6. Drizzle melted butter over the top.
  7. Bake uncovered at 400°F for 15 to 20 minutes or until eggs are cooked to desired doneness.
