Ingredients

  • 6 large potatoes
  • 1 cup sour cream
  • 1/4 cup butter
  • 8 slices cooked bacon
  • 3 tablespoons chopped chives
  • 3 cups shredded Mozzarella cheese
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Cut baked potatoes in half lengthwise.
  2. Scoop out the potato flesh, leaving about 1/8-inch shell.
  3. Add sour cream and butter to the potato mixture and mash well.
  4. Stir in crumbled bacon and 2 tablespoons chopped chives.
  5. Add shredded Mozzarella cheese and mix well.
  6. Fill each potato shell with the mixture.
  7. Sprinkle shredded Swiss cheese on top of each filled shell.
  8. Bake at 350°F for 25 minutes.
  9. Top with remaining chopped chives before serving.
