Ingredients

  • 5 lb. duck
  • 2 c. beef broth
  • 3 Tbsp. mandarin peel in syrup, chopped
  • 2 c. mandarin juice
  • 2 Tbsp. red currant jelly
  • 3 Tbsp. sugar
  • salt
  • pepper
  • 3 Tbsp. wine vinegar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. lemon peel, thinly sliced
  • 1/2 c. lemon juice
  • 1/4 c. dry white wine

Instructions

  1. Preheat the oven to 350°F.
  2. Prick the duck skin all over and rub the skin and cavity with salt and pepper.
  3. Roast the duck for 1 hour and 45 minutes, or until a meat thermometer registers 180°F, pouring off fat every 20 minutes.
  4. While the duck is roasting, prepare the sauce by combining mandarin juice, mandarin peel in syrup, lemon juice, red currant jelly, sugar, wine vinegar, and dry white wine in a saucepan.
  5. Simmer the sauce until slightly thickened, about 10-15 minutes.
  6. Mix cornstarch with a little water to create a slurry, then stir into the sauce to thicken further.
  7. Add sliced lemon peel and drained mandarin segments to the sauce and heat through.
  8. Once the duck is cooked, let it rest for a few minutes before carving.
  9. Serve the carved duck with the mandarin sauce spooned over.
