Ingredients

  • ducks (tamed or wild)
  • bread
  • butter
  • onions
  • pepper
  • mashed potatoes or seasoned Irish potatoes

Instructions

  1. Pick wild ducks clean and singe them over a blaze without scalding.
  2. Draw and wipe the ducks well inside with a cloth.
  3. Rub the inside and outside of each duck with salt and pepper.
  4. Stuff each duck with bread and butter stuffing, along with onions and seasoning.
  5. For tame ducks, prepare them the same way as young geese, stuffing with bread, butter, onions, and pepper or seasoned Irish potatoes.
