Ingredients

  • 6 oz. unsalted butter
  • 8 oz. flour
  • 6 oz. sugar
  • 2 oz. crystallized ginger
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line the base of an 8-inch cake pan.
  3. Cut the unsalted butter into the sifted flour until the mixture resembles breadcrumbs.
  4. Stir in the sugar and chopped crystallized ginger.
  5. Bind the mixture with most of the beaten egg to form a pliable dough.
  6. Knead the dough until smooth and pliable.
  7. Turn the dough into the prepared pan and press down to create a smooth surface.
  8. Pinch the edges to decorate.
  9. Using a knife, lightly score the surface in a lattice pattern.
  10. Brush the surface with the remaining beaten egg for glazing.
  11. Bake for 35 to 45 minutes, until the cake is firm to touch.
  12. Cool in the pan before serving.
