Dynamite Fish Cakes
Ingredients
- 5 Large Red Potatoes, cubed & boiled ⓘ
- 4 Strips of Bacon, fried & chopped ⓘ
- 1 Small Yellow Onion ⓘ
- 11/4 Lbs. Cooked, Flaked Haddock ⓘ
- 1 Egg, Lightly Beaten ⓘ
- 1 Cup, Plain Bread Crumbs ⓘ
- 2 Tablespoons, grated Parmesan Cheese ⓘ
- 3 Cloves Garlic, Finely Diced ⓘ
- Sea Salt & Ground Black Pepper ⓘ
- 3 Tablespoons Of Canola Oil ⓘ
Instructions
- Mash Potatoes in a large glass bowl.
- Cook Bacon & Onion in oil.
- Add Bacon & Onion to Potatoes.
- Mix in the cooked Haddock.
- Mix in Beaten Egg, Salt & Pepper.
- Cover and Chill for 2 hours.
- Mix Parmesan Cheese and Bread Crumbs in shallow bowl.
- Press Fish Mixture into 6 round patties.
- Heat the oil over Medium-High heat.
- Fry the cakes for 1 to 2 minutes until golden brown
