Ingredients

  • 2 lb. frozen hash brown potatoes
  • 16 oz. sour cream
  • 8 oz. shredded Colby cheese
  • 4 oz. shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 Tbsp. chicken flavor instant bouillon

Instructions

  1. In a large bowl, combine all ingredients except 1/2 cup of Colby cheese.
  2. Mix well and pour into a buttered 13 x 9-inch baking dish.
  3. Bake at 350°F for 55 to 60 minutes or until potatoes are tender.
  4. Top with the remaining 1/2 cup of Colby cheese and bake for an additional 3 to 5 minutes or until the cheese melts.
  5. Let stand for 5 minutes before serving.
