- Allow cream cheese to soften for 1 hour.
- Combine softened cream cheese with sugar, lemon juice, eggs, and vanilla.
- Beat until smooth and well combined.
- Place one vanilla wafer in the bottom of each cupcake liner.
- Pour cream cheese mixture over the wafer until the liner is half full.
- Bake at 375°F (190°C) for 15 to 20 minutes.
- Allow to cool completely.
- Spoon cherry pie filling on top of each cheesecake before serving.
