Delightful cherry cheesecakes combine creamy filling with cherry topping on a vanilla wafer crust, perfect for gatherings or a sweet, fruity dessert everyone will enjoy.

Ingredients

  • 16 oz. cream cheese
  • 3/4 cup sugar
  • 1 tablespoon lemon juice
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 can cherry pie filling
  • 1 box vanilla wafers

Instructions

  1. Allow cream cheese to soften for 1 hour.
  2. Combine softened cream cheese with sugar, lemon juice, eggs, and vanilla.
  3. Beat until smooth and well combined.
  4. Place one vanilla wafer in the bottom of each cupcake liner.
  5. Pour cream cheese mixture over the wafer until the liner is half full.
  6. Bake at 375°F (190°C) for 15 to 20 minutes.
  7. Allow to cool completely.
  8. Spoon cherry pie filling on top of each cheesecake before serving.
