Island Cookies
Island Cookies are delightful treats combining rich chocolate, toasted coconut, and crunchy nuts, perfect for satisfying sweet cravings and sharing with friends and family.
Ingredients
- 1 2/3 cups all-purpose flour ⓘ
- 3/4 teaspoon baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 3/4 cup butter or margarine, softened ⓘ
- 3/4 cup packed brown sugar ⓘ
- 1/3 cup granulated sugar ⓘ
- 1 teaspoon vanilla extract
- 1 egg ⓘ
- 2 cups milk chocolate chips ⓘ
- 1 cup flaked coconut, toasted if desired ⓘ
- 3/4 cup chopped macadamia nuts or walnuts ⓘ
Instructions
- Combine flour, baking powder, baking soda, and salt in a small bowl.
- Beat butter, brown sugar, granulated sugar, and vanilla in a large mixing bowl until creamy.
- Beat in the egg.
- Gradually blend in the flour mixture.
- Stir in chocolate chips, toasted coconut, and chopped nuts.
- Drop by slightly rounded tablespoonfuls onto ungreased baking sheets.
- Bake in preheated 375°F (190°C) oven for 8 to 11 minutes or until edges are lightly browned.
- Let stand for 2 minutes.
- Remove to wire racks to cool completely.
