Easy Clam Puff

Ingredients

  • 3 Tbsp. margarine
  • 1 1/2 c. scalded milk
  • 1 (10 oz.) can minced clams with broth
  • 3 eggs, slightly beaten
  • 1 1/2 Tbsp. minced onion
  • 1/2 tsp. salt
  • ground pepper
  • 18 saltines, crushed
  • 1 can cream of mushroom or Cheddar cheese soup

Instructions

  1. Stir margarine into warm milk to melt.
  2. Stir in clams, eggs, onion, salt and pepper to blend.
  3. Stir in crackers until thoroughly blended.
  4. Pour into greased 1 1/2-quart casserole. Bake in preheated 350° oven until puffed and golden, about 40 to 45 minutes.
  5. Serve with sauce made of soup blended with 1/2 cup milk or water.
  6. Serves 4.
