Ingredients

  • 1 cup frozen chopped onions
  • 2 teaspoons salt (optional)
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 (16 oz.) can pinto beans, rinsed and drained
  • 1 (28 oz.) can petite diced tomatoes
  • 3 (14 1/2 oz.) cans vegetable broth or chicken broth
  • 1 (15 oz.) can Fiesta corn, drained
  • 1 (15 oz.) can tomato sauce
  • 1 (15 oz.) can diced new potatoes, drained
  • 1 cup frozen green beans

Instructions

  1. Mix all ingredients in a 4-quart or larger Crock-Pot.
  2. Cover and cook on high for 6 hours or until vegetables are tender.
