Tomatoes 'N Rice

A quick, flavorful rice dish with tomatoes, onions, and peppers, perfect for a comforting meal with a hint of spice and savory richness.

Ingredients

  • 1 cup rice (uncooked)
  • 1/2 small onion
  • 1/4 small bell pepper (diced)
  • 1 teaspoon garlic salt
  • 2 tablespoons margarine
  • 1 can diced tomatoes with juice
  • dash hot pepper sauce

Instructions

  1. Cook the rice until tender and set aside.
  2. Saute chopped small onion and diced small bell pepper in margarine until softened.
  3. Add hot pepper sauce and garlic salt to the sauteed vegetables.
  4. Stir in the can of diced tomatoes with juice and cook for a few minutes.
  5. Fold in the cooked rice and stir until well combined. If mixture is not juicy enough, add a little water.
  6. Season with additional salt and pepper to taste before serving.
