Ingredients

  • 1 1/2 cups pecans, chopped coarse
  • 1 cup packed light brown sugar
  • 2/3 cup light corn syrup
  • 1/4 cup butter or margarine, cut into small pieces
  • 1 teaspoon vanilla
  • 1/2 cup evaporated milk
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Grease an 8-inch square baking pan.
  2. Sprinkle pecans evenly over the bottom of the prepared pan.
  3. Mix brown sugar and corn syrup in a 2-quart glass measure.
  4. Add butter, vanilla, and evaporated milk to the sugar and corn syrup mixture.
  5. Cook over medium heat, stirring constantly, until the mixture reaches the soft-ball stage (about 235°F to 240°F).
  6. Pour the hot caramel into the prepared pan over the pecans.
  7. Let the caramel cool completely at room temperature.
  8. Once cooled, cut into squares.
  9. Melt the semi-sweet chocolate chips and drizzle or spread over the caramel pieces.
