Easy Potato Chowder

Ingredients

  • 4 oz. bacon, diced
  • 1 c. chopped onion
  • 2 c. milk or cream
  • 2 c. chicken broth
  • 1 tsp. crushed thyme
  • 3 1/2 c. firmly packed uncooked frozen mashed potatoes
  • 2 Tbsp. fresh chopped parsley
  • dash of salt and pepper

Instructions

  1. Saute bacon and onion until bacon begins to crisp; remove excess bacon grease, if desired.
  2. Add milk, broth and thyme; bring to a boil.
  3. Stir in potatoes; simmer 5 minutes.
  4. Stir in parsley, salt and pepper.
  5. Makes 6 servings, each with 175 calories, 14 g fat and 24 mg cholesterol.
