Ingredients

  • 8 cans whole potatoes, drained very well and cut in half or quarters
  • salt and pepper
  • 1 lb. bacon, cooked crisp
  • 1 lb. Velveeta cheese, cut in cubes
  • 1 c. chopped onion
  • 2 c. mayonnaise

Instructions

  1. Drain the canned potatoes very well and cut them in half or quarters.
  2. In a large mixing bowl, combine the drained potatoes, chopped onion, mayonnaise, and Velveeta cheese cubes. Season with salt and pepper to taste.
  3. Mix everything thoroughly until well combined.
  4. Pour the mixture into a large casserole dish.
  5. Crumble the cooked crisp bacon evenly over the top of the casserole.
  6. Bake at 350°F (175°C) for 1 hour until bubbly and golden.
