Ingredients

  • 4 cups flour
  • 2 cups butter
  • 1/2 cup ice water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1 tablespoon lemon juice

Instructions

  1. Add salt and sugar to flour in a mixing bowl; cut in cold butter until the mixture is fine and crumbly.
  2. Beat eggs for 5 minutes; add lemon juice to the eggs.
  3. Add ice water gradually and mix to form a stiff dough.
  4. Lift the dough onto a well-floured surface.
  5. Roll out into a rectangular shape; fold all four sides onto the dough.
  6. Roll out again; repeat this folding process 4 times.
  7. Fold the dough again, wrap in a napkin, and place on a plate.
  8. Chill on ice or in the refrigerator until thoroughly chilled.
  9. Roll out the chilled dough and use for patties, pie crusts, or tart shells.
