Ingredients

  • 5 Tbsp. melted butter
  • 1 large sweet onion, sliced
  • 1 (14 to 16 oz.) pkg. frozen cottage fried potatoes
  • 3/4 tsp. salt
  • 1 c. shredded Cheddar cheese

Instructions

  1. In a large skillet over medium heat, cook the onion slices in melted butter until tender, about 5 minutes.
  2. Remove the cooked onions to a plate and keep warm for later use.
  3. Add the frozen cottage fried potatoes and salt to the remaining butter in the skillet; cover and cook over medium heat until the potatoes are golden brown.
  4. Return the cooked onions to the skillet and sprinkle with shredded Cheddar cheese.
  5. Cover and cook until the cheese melts.
