Ingredients

  • 3 slices bacon
  • 1 cup white rice
  • 1/2 cup chopped onion
  • 3 cups V-8 juice

Instructions

  1. Cook bacon in a skillet until crisp.
  2. Remove bacon and crumble it.
  3. In the bacon drippings over low heat, cook rice and chopped onion until the rice is browned and the onion is soft, stirring constantly.
  4. Add V-8 juice and green pepper.
  5. Reduce heat to low and cover.
  6. Simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Garnish with crumbled bacon before serving.
