Ingredients

  • 9 oz. cooked tortellini and cooled
  • 2 c. shredded red cabbage
  • 12 oz. fresh spinach, stems removed
  • 2 large tomatoes, cored, cut into halves and seeded, then 1/2-inch cubes
  • 1/2 c. thin sliced scallions in circles
  • 8 pieces salami or bacon, cut in 1/2-inch pieces

Instructions

  1. Mix all ingredients together and arrange in a flat bowl so you can see all ingredients.
  2. Pour ranch dressing over the top of the salad in thin lines so the dressing does not cover all veggies, then serve.
