Ingredients

  • 6 red potatoes
  • 1 large onion
  • 1 zucchini
  • 2 to 3 tomatoes
  • garlic
  • olive oil

Instructions

  1. Thinly slice the red potatoes and onion.
  2. Saute the sliced potatoes and onion in olive oil with garlic until the potatoes begin to soften.
  3. Add the zucchini slices to the pan and cook for another 5 minutes.
  4. Add cubed tomatoes to the mixture and cook until the tomatoes start to fall apart.
