Ingredients

  • 4 chicken bouillon cubes
  • 1 qt. water
  • 1 c. chopped celery
  • 1 large onion, chopped
  • 2 1/2 c. peeled and cubed potatoes
  • 20 oz. bag frozen mixed vegetables
  • 2 cans cream of chicken soup
  • 1 lb. Velveeta cheese, cubed

Instructions

  1. Simmer bouillon cubes, water, celery, and onion in a large pot until the celery is tender, about 20 minutes.
  2. Add the potatoes and frozen mixed vegetables and simmer until tender, about 15 minutes.
  3. Add the cans of cream of chicken soup and the cubed Velveeta cheese.
  4. Simmer until the cheese is melted and the soup is hot.
