Ingredients

  • 2 lb. yellow squash, cut into small pieces
  • 2 (8 oz.) cans chicken broth
  • 1 medium onion, chopped
  • 1 (8 oz.) pkg. cream cheese
  • salt and pepper to taste

Instructions

  1. Combine the yellow squash and chopped onion in chicken broth and cook until tender.
  2. In a blender, blend half of the cooked squash mixture with half of the cream cheese until smooth.
  3. Repeat blending with the remaining squash mixture and cream cheese.
  4. Return the pureed soup to the pot and simmer for 15 minutes.
  5. Season with salt and pepper to taste before serving.
