Easy Vietnamese Pho

Ingredients

  • 6 cups beef stock
  • 1 None lime, juiced
  • 2 tbsp fish sauce + extra to serve
  • 2 None star anise
  • 2 None cardamom pods (optional)
  • 7 oz rice noodles
  • 1 lb beef tenderloin, sliced very thinly
  • 4 oz bean sprouts
  • 1/2 bunch fresh cilantro, leaves picked
  • 1/2 bunch fresh basil leaves
  • 2 None spring onions, thinly sliced
  • 1 None long red chili, thinly sliced
  • None None fried shallots, to serve
  • None None lime wedges, to serve

Instructions

  1. In a large saucepan, combine stock, lime juice, fish sauce, star anise and cardamom. Bring to a boil, reduce heat and simmer for 5 mins.
  2. Meanwhile, prepare noodles following package instructions. Drain well.
  3. Divide noodles between serving bowls. Top with raw beef slices, bean sprouts, herbs, spring onion and chili. Ladle hot stock over top and sprinkle with fried shallots. Serve with fish sauce and lime wedges.
