Edith's Posh Squash combines tender yellow squash with a creamy, cheesy mixture, baked to perfection. A comforting dish perfect for family dinners or entertaining guests.

Ingredients

  • 2 lb. yellow squash, sliced
  • 2 eggs
  • 1 c. mayonnaise
  • 1 small onion, chopped
  • 1/4 c. chopped green pepper
  • 1 c. Parmesan cheese

Instructions

  1. Cook the sliced yellow squash in salted water until tender.
  2. Drain the squash well and set aside.
  3. In a mixing bowl, combine eggs, mayonnaise, chopped onion, chopped green pepper, and Parmesan cheese.
  4. Add the cooked squash to the mixture and mix well.
  5. Pour the mixture into a buttered baking dish.
  6. Bake at 350°F for 30 to 40 minutes until golden on top.
  7. Optionally, sprinkle bread crumbs on top before baking for added crunch.
