Ingredients

  • 1 cup flour
  • 5 tablespoons powdered sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 1/2 cups sugar
  • 1/4 cup flour

Instructions

  1. Combine flour, powdered sugar, and butter; mix until crumbly.
  2. Pat the mixture into a 9 x 12-inch pan and bake at 350°F for 15 minutes.
  3. In a bowl, beat eggs; then add sugar, flour, and chopped rhubarb; mix well.
  4. Pour the rhubarb mixture over the baked crust.
  5. Return to the oven and bake at 350°F for an additional 30 to 35 minutes.
  6. Cool the bars before cutting into squares.
