EdS Scampi
Ingredients
- 1 lb Shrimp (21 - 25 count per pound) ⓘ
- 1/4 cup olive oil ⓘ
- 3 tbsp. Butter ( clarified preferred )
- 3/4 cup white wine ( or chicken stock ) ⓘ
- parsley, chopped ⓘ
- 3-4 cloves garlic, minced ⓘ
- 1 small onion chopped ⓘ
- 1-3 cloves shallot ⓘ
- 1 tsp. Oregano ⓘ
- 1 tsp. Basil ⓘ
- fresh ground pepper ⓘ
- sea salt to taste ⓘ
Instructions
- 1. In a large skillet ; Heat olive oil and saute onion, shallots and garlic 2-3 minutes. Then add oregano and basil saute 1 minute more.
- 2. Pour wine or stock into pan and reduce ( 5 minutes ).
- 3. Add shrimp and heat completely. Stir in butter and add parsley. Add salt and pepper to taste.
- 4. Serve with pasta or over rice.
