Creamy egg salad sandwiches with tangy mustard, relish, and black pepper, perfect for a quick lunch or picnic, suited for casual gatherings and snack lovers.

Ingredients

  • 4 hard-boiled eggs
  • 2 tsp. mustard
  • 1/2 tsp. ground black pepper
  • 1 tsp. cider vinegar
  • 1 tsp. pickle relish or 5 small ripe or green olives
  • salt to taste
  • Miracle Whip

Instructions

  1. Peel the cooled boiled eggs and mash them in a bowl.
  2. Add the mustard, ground black pepper, cider vinegar, pickle relish or olives, salt, and Miracle Whip to the mashed eggs.
  3. Mix well until the ingredients are evenly combined to form the egg salad mixture.
  4. Cut slices of white or wheat bread, removing the crusts if desired.
  5. Lightly spread
  6. Benecol
  7. margarine on one side of each bread slice.
  8. Spread the egg mixture evenly over the margarine side of one slice of bread.
  9. Top with the second slice of bread to form a sandwich.
  10. Wrap the sandwich in plastic wrap and refrigerate before serving.
