Ingredients

  • 2 1/2 cups sifted flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 1/2 cup cooking oil
  • 2 cups pumpkin

Instructions

  1. Sift together the flour, cinnamon, soda, and salt.
  2. In a bowl, mix oil, sugar, and pumpkin by hand until well combined.
  3. Gradually add the flour mixture to the pumpkin mixture, blending until smooth.
  4. Pour the batter into two greased and floured loaf pans.
  5. Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
