Eggnog Canelé

Ingredients

  • 1 medium egg, plus 1 egg white
  • 100 g caster sugar
  • 75 ml oil
  • 250 ml eggnog
  • 100 ml milk
  • 250 g plain flour
  • 2 heaped tsp baking powder
  • 200 g icing sugar
  • Few drops None green food colouring

Instructions

  1. Preheat oven to 325°F. Whisk whole egg, sugar, oil, eggnog and milk. Sift together flour and baking powder then fold in. Divide between 10 - 3 oz canele molds and bake for 25-30 mins. Allow to cool in pan for 5 mins then remove and cool completely on a wire rack.
  2. Mix powdered sugar with egg white until smooth, adding 2-3 tbsp water to thin if necessary. Color 1/2 mixture with green food coloring. Coat 1/2 caneles with green icing and remainder with white. Set aside until dry. Transfer remaining icing to piping bags fitted with small plain tips and decorate iced caneles.
