- In a medium saucepan, mix the gelatin with half of the sugar.
- Blend in the milk and egg yolks.
- Let stand for 1 minute.
- Stir over low heat until the gelatin is completely dissolved, about 5 minutes.
- Add rum and nutmeg.
- Chill, stirring occasionally until the mixture mounds slightly when dropped from a spoon.
- In a large bowl, beat the egg whites with cream of tartar until foamy.
- Beat in the remaining sugar, 1 tablespoon at a time, until whites are glossy and stand in soft peaks.
- Fold in the gelatin mixture and whipped cream.
- Turn into a 6-cup ring mold.
- Chill until firm.
