Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup sugar
  • 1 1/4 cups milk
  • 4 eggs, separated
  • 2 tablespoons rum
  • 2 teaspoons rum flavoring (optional)
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cream of tartar

Instructions

  1. In a medium saucepan, mix the gelatin with half of the sugar.
  2. Blend in the milk and egg yolks.
  3. Let stand for 1 minute.
  4. Stir over low heat until the gelatin is completely dissolved, about 5 minutes.
  5. Add rum and nutmeg.
  6. Chill, stirring occasionally until the mixture mounds slightly when dropped from a spoon.
  7. In a large bowl, beat the egg whites with cream of tartar until foamy.
  8. Beat in the remaining sugar, 1 tablespoon at a time, until whites are glossy and stand in soft peaks.
  9. Fold in the gelatin mixture and whipped cream.
  10. Turn into a 6-cup ring mold.
  11. Chill until firm.
