Ingredients

  • 1 large eggplant
  • 1/2 cup evaporated milk
  • 3 slices white bread
  • 2 eggs
  • 1/4 cup chopped onion
  • salt and pepper to taste
  • grated cheese

Instructions

  1. Peel and cube the eggplant, then boil until tender.
  2. Soak the white bread slices in evaporated milk.
  3. Drain the cooked eggplant and add the bread and milk mixture.
  4. Mix well, then stir in beaten eggs, chopped onion, salt, and pepper.
  5. Pour the mixture into a well-buttered casserole dish.
  6. Top with grated cheese.
  7. Bake at 350°F (175°C) for 30 to 35 minutes until golden and set.
