Ingredients

  • 2 medium eggplant, sliced into 1/2-inch pieces
  • 2 large tomatoes, sliced
  • 1 onion, sliced large
  • 1 large clove garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vinegar

Instructions

  1. Layer the sliced eggplant, tomatoes, and onion in a baking dish, with the tomatoes on top.
  2. Pour olive oil evenly over the layered vegetables.
  3. Sprinkle salt and black pepper over the top.
  4. Add minced garlic and vinegar evenly across the layers.
  5. Place in an oven preheated to 350°F (175°C).
  6. Bake for 45 minutes until vegetables are tender and top is slightly browned.
  7. Garnish with Parmesan cheese before serving.
