Ingredients

  • 2 lb. Ricotta cheese
  • 1/2 to 1 lb. Mozzarella cheese
  • 2 boxes frozen spinach
  • 2 medium eggplant
  • 1 jar or can tomato sauce with mushrooms
  • Grated cheese

Instructions

  1. Heat oven to 350°F (175°C). Fry eggplant slices until golden and drain on paper towels.
  2. Cook spinach according to package instructions and drain well.
  3. Mix ricotta cheese and cooked spinach together, blending gently without beating.
  4. Spread the ricotta-spinach mixture evenly in a baking pan.
  5. Layer fried eggplant slices on top of the ricotta mixture.
  6. Slice or grate mozzarella cheese and layer over the eggplant.
  7. Pour tomato sauce with mushrooms over the layered ingredients.
  8. Sprinkle grated cheese on top.
  9. Bake in the preheated oven for 45 minutes until bubbly and golden.
  10. Remove from oven, let cool slightly, then serve.
