El Dorado Eggs combines seasoned tomato and vegetable mixture with cheesy crescent rolls and eggs, creating a flavorful, hearty breakfast or brunch dish perfect for family gatherings.

Ingredients

  • 1 pkg. taco seasoning mix
  • 1 large green pepper, cut in 1 x 1/4-inch strips
  • 8 oz. mushrooms, drained
  • 1 cup grated Cheddar cheese
  • 1 cup sour cream
  • 1 (1 lb.) can whole tomatoes
  • 1 (8 oz.) pkg. refrigerator crescent rolls
  • 8 eggs, beaten
  • 1 tsp. salt
  • scant pepper
  • butter

Instructions

  1. Use an ovenproof skillet (approximately 2 to 3 quarts).
  2. Combine taco seasoning mix, tomatoes, green peppers, and mushrooms in the skillet.
  3. Cover and simmer for 10 minutes.
  4. Remove the crescent rolls from the package and separate into 4 rectangles.
  5. Sprinkle each rectangle with 1/4 of the grated Cheddar cheese.
  6. Roll up each rectangle tightly, jellyroll fashion, and slice each into 3 sections.
  7. In a bowl, beat eggs and mix with sour cream, salt, and pepper.
  8. Remove the tomato mixture from heat and carefully spoon the egg mixture over it while still hot.
  9. Place the biscuit spirals on top of the egg mixture and sprinkle each with poppy seed.
  10. Dot each biscuit spiral with butter.
  11. Bake at 350°F (175°C) for 30 to 60 minutes until biscuits are browned and the egg mixture is firm.
