El Dorado Eggs combines seasoned tomato and vegetable mixture with cheesy crescent rolls and eggs, creating a flavorful, hearty breakfast or brunch dish perfect for family gatherings.

Instructions
- Use an ovenproof skillet (approximately 2 to 3 quarts).
- Combine taco seasoning mix, tomatoes, green peppers, and mushrooms in the skillet.
- Cover and simmer for 10 minutes.
- Remove the crescent rolls from the package and separate into 4 rectangles.
- Sprinkle each rectangle with 1/4 of the grated Cheddar cheese.
- Roll up each rectangle tightly, jellyroll fashion, and slice each into 3 sections.
- In a bowl, beat eggs and mix with sour cream, salt, and pepper.
- Remove the tomato mixture from heat and carefully spoon the egg mixture over it while still hot.
- Place the biscuit spirals on top of the egg mixture and sprinkle each with poppy seed.
- Dot each biscuit spiral with butter.
- Bake at 350°F (175°C) for 30 to 60 minutes until biscuits are browned and the egg mixture is firm.
