Ingredients

  • 1 1/2 lb. ground beef
  • 1 package yellow rice mix
  • 1 can cheddar cheese soup
  • 1/3 cup milk
  • 1 can stewed tomatoes
  • 1 package chili mix
  • 1/2 cup onions, chopped
  • 1/2 cup olives, sliced or chopped
  • 1 cup lettuce, shredded
  • 1 or more fresh tomatoes, chopped

Instructions

  1. Brown the ground beef; season with salt, pepper, and garlic salt or powder.
  2. Add canned stewed tomatoes and chili mix to the meat; cook until heated through.
  3. Cook yellow rice according to package directions.
  4. Mix the cooked meat mixture with the prepared rice.
  5. Transfer the mixture into a large Pyrex dish.
  6. Heat the cheese soup and milk until smooth, then pour over the meat and rice mixture.
  7. Combine chopped onions, sliced or chopped olives, shredded lettuce, and chopped fresh tomatoes; mix well.
  8. Spread the vegetable mixture over the casserole.
  9. Sprinkle grated cheese on top.
  10. Finish by crushing Fritos over the cheese before serving.
