Ingredients

  • 1 lb. rotini noodles
  • 1/2 c. sugar
  • 1/2 c. vinegar
  • 2 tsp. prepared mustard
  • 1 Tbsp. parsley
  • 1 unpeeled cucumber
  • 1 medium onion

Instructions

  1. Cook the rotini noodles according to package directions.
  2. Mix sugar, vinegar, prepared mustard, parsley, and peeled cucumber in a blender until well combined.
  3. Pour the dressing over the cooked rotini and toss to combine.
  4. Add sliced onion, toss again, and serve chilled.
