Ingredients

  • 1 c. unblanched sliced almonds
  • 1 c. butter
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 (12 oz.) pkg. chocolate chips
  • 2 c. finely ground walnuts

Instructions

  1. Arrange unblanched sliced almonds in a single layer over a foil-lined 12 x 7-inch baking sheet.
  2. In a 2-quart saucepan, combine butter, sugar, vanilla, and salt.
  3. Cook over high heat, stirring constantly with a clean, dry spoon, until the butter is melted, about 1 minute.
  4. Continue cooking and stirring for 5 to 7 minutes until the mixture turns the color of unbleached almonds.
  5. Immediately pour the caramel mixture over the almonds on the baking sheet; do not scrape the pan.
  6. Cool completely to set the toffee.
  7. Melt the chocolate chips in a double boiler or microwave until smooth.
  8. Break the cooled toffee into pieces and dip into the melted chocolate.
  9. Sprinkle finely ground walnuts on top of the chocolate-coated toffee.

Tips & Substitutions

To prevent the toffee from becoming too hard, avoid overcooking the caramel mixture. If you prefer a nut-free version, you can substitute the almonds and walnuts with toasted coconut flakes or simply leave them out. When melting the chocolate, use a microwave in short bursts to prevent burning, or a double boiler for better control.

Serving Suggestions

Serve the elegant toffee as a delightful dessert or snack, pairing it with a cup of coffee or tea for a perfect afternoon treat. For a festive touch, consider presenting it alongside Fruity Dessert Cups or as a sweet addition to a dessert platter. These flavors complement each other beautifully.

Storage & Reheating

Store the toffee in an airtight container at room temperature for up to two weeks. If you prefer to keep it longer, you can refrigerate it for up to a month. To maintain the chocolate's texture, avoid freezing, as it may cause the chocolate to become dull.

Frequently Asked Questions

Can I use different types of nuts in this toffee recipe?

Absolutely! Feel free to customize the recipe by using pecans, hazelnuts, or even macadamia nuts. Just ensure that the nuts you choose are roasted for added flavor, and adjust the quantity according to your preference.

How can I make the toffee less sweet?

To reduce the sweetness of the toffee, consider using dark chocolate instead of milk chocolate for the coating. You can also decrease the amount of sugar slightly in the caramel mixture, but be careful not to affect the texture of the toffee.

What should I do if my toffee is too sticky?

If your toffee turns out sticky, it may not have been cooked long enough. To remedy this, you can reheat the toffee gently in a saucepan, stirring until it reaches the desired consistency. Make sure to cool it again before breaking into pieces.
