Ingredients

  • 3 c. fresh or canned pineapple chunks
  • 2 c. cold, cooked rice
  • 1/2 c. chopped celery
  • 1/3 c. raisins
  • 1/4 c. dairy sour cream
  • 1/4 c. salad dressing
  • 1/2 tsp. ginger

Instructions

  1. Combine pineapple, rice, celery, and raisins in a large bowl.
  2. Toss lightly to mix.
  3. In a separate bowl, stir together sour cream, salad dressing, and ginger.
  4. Pour the dressing mixture over the rice mixture and toss to coat evenly.
  5. Cover and chill in the refrigerator.
  6. Serve in a bowl lined with crisp salad greens, if desired.
