Ingredients

  • 1 beaten egg
  • 1 cup milk
  • 1 cup cracker crumbs
  • 2 cups cream-style corn
  • 1/4 cup chopped onions
  • 3 tablespoons chopped canned pimiento
  • 1 tablespoon margarine

Instructions

  1. Mix beaten egg, milk, 2/3 cup cracker crumbs, salt, and dash of pepper.
  2. Stir in cream-style corn, chopped onions, and chopped pimiento.
  3. Pour the mixture into a 1-quart casserole dish.
  4. Toss melted margarine with remaining cracker crumbs and sprinkle on top of the corn mixture.
  5. Bake at 350°F for 65 to 70 minutes until golden and bubbly.
