Ingredients

  • 3 sticks butter (1 1/2 cups), at room temperature
  • 1 lb. box confectioners sugar
  • 6 large eggs
  • 2 1/2 cups sifted all-purpose flour
  • 1 tablespoon vanilla
  • 1 tablespoon fresh lemon juice

Instructions

  1. In the large bowl of an electric mixer, beat together the butter and sugar until light and fluffy.
  2. At medium speed, beat in eggs one at a time for 1 minute after each addition.
  3. Beat in the flour in 4 additions until blended each time.
  4. Beat in vanilla and lemon juice.
  5. Turn the batter into a greased and floured 10-inch angel cake pan.
  6. Bake in a preheated 350°F (175°C) oven until a cake tester inserted in the center comes out clean, about 1 hour.
  7. Cool the cake in the pan on a wire rack for 5 minutes.
