Elsie’s Swiss Steak features tender flank steak coated in flour and topped with onions, slow-baked to develop rich flavors perfect for comforting family dinners.

Ingredients

  • 1 or 2 large pieces flank steak
  • flour
  • finely chopped onions

Instructions

  1. Pierce the steak with a fork or pound it with a meat hammer to tenderize.
  2. Spread soft butter on both sides of the steak and cover it thoroughly.
  3. Roll the steak in flour until well coated.
  4. Spread the chopped onions about 1 inch thick on top of the steak.
  5. Place the steak in a large pan with a lid or cover it with foil.
  6. Bake at 325°F (163°C) for 1½ to 2 hours until tender.
