- Start mexican rice in a pot, and beans in a separate pot.
- Shred the chicken using a fork.
- Quarter the limes, set aside.
- Dice jalapenos & garlic.
- In a large sauce pan, saute jalapenos and garlic until brown, then add chicken.
- When finished cooking, layer in a small bowl or baking dish... Rice, Beans, Chicken, and top with shredded cheese and a wedge of lime.
