Ingredients

  • Roasted Chicken
  • 2 Jalapeno Peppers
  • 4 cloves garlic
  • 6T EVOO
  • 2 Limes, quartered
  • Mexican shredded cheese
  • Mexican Rice

Instructions

  1. Start mexican rice in a pot, and beans in a separate pot.
  2. Shred the chicken using a fork.
  3. Quarter the limes, set aside.
  4. Dice jalapenos & garlic.
  5. In a large sauce pan, saute jalapenos and garlic until brown, then add chicken.
  6. When finished cooking, layer in a small bowl or baking dish... Rice, Beans, Chicken, and top with shredded cheese and a wedge of lime.
