A hearty and cheesy Mexican-inspired hot dish featuring seasoned meat, tortillas, and a creamy enchilada sauce, perfect for comforting family dinners or potlucks.

Ingredients

  • 2 lb hamburger
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can enchilada sauce
  • 1 large can evaporated milk
  • 1 pkg. flour tortillas
  • 10 oz. shredded Cheddar cheese

Instructions

  1. Brown the hamburger; add the cream of chicken soup, cream of mushroom soup, enchilada sauce, and evaporated milk.
  2. Heat the mixture until it thickens.
  3. Line a 9 x 12-inch baking pan with tortillas and pour in half of the meat mixture.
  4. Add another layer of tortillas on top of the meat mixture.
  5. Pour the remaining meat mixture over the tortillas.
  6. Bake at 350°F (175°C) for 25 minutes.
  7. Top with shredded Cheddar cheese and bake for an additional 5 to 10 minutes until cheese is melted and bubbly.
