Ingredients

  • 1 whole chicken (heart, liver, etc. removed)
  • 2 to 3 cans chicken broth
  • 1 large onion
  • 2 to 3 cloves garlic
  • 1 Tbsp. oregano
  • 1/2 tsp. cumin
  • 1 Tbsp. chili powder
  • jalapenos (optional)
  • salt and pepper
  • 2 (1 lb. 13 oz.) cans hominy
  • 2 (1 lb. 13 oz.) cans hominy *

Instructions

  1. Place the whole chicken in a large pot.
  2. Cover the chicken with 2/3 chicken broth and 1/3 water.
  3. Bring to a boil and simmer until the meat falls from the bones.
  4. Remove the chicken from the pot; remove all meat from the bones and shred.
  5. Leave plenty of multi-bite chunks of chicken.
  6. Saute the large onion, 2 to 3 cloves of garlic, and chopped garlic in a bit of the fat skimmed from the broth.
  7. Add the sautéed onion, garlic, and shredded chicken back to the pot along with the oregano, cumin, chili powder, jalapenos (if using), salt, and pepper.
  8. Simmer for about 45 minutes.
  9. Add the hominy and continue to simmer for 45 minutes to 1 hour longer.
  10. Taste and adjust seasonings as needed.
  11. Serve garnished as desired.
