A flavorful layered casserole combining beef, cheese, and enchilada sauce wrapped in tortillas, perfect for comforting family dinners and casual gatherings with a Mexican flair.

Ingredients

  • 1 pkg. corn or flour tortillas
  • 1 can enchilada sauce
  • 1 pkg. taco seasoning
  • 1 lb. hamburger
  • 1 (about 16 oz.) pkg. shredded Jack cheese or Mexican cheese
  • 1 large onion

Instructions

  1. In a 9-inch round casserole dish, pour a little enchilada sauce.
  2. Place 3 tortillas in the dish and add a little sauce on top.
  3. Add half of the cooked hamburger mixture and half of the chopped onion.
  4. Sprinkle with some shredded cheese.
  5. Repeat the layers: tortillas, sauce, hamburger mixture, onion, and cheese.
  6. Finish with a layer of tortillas and sauce on top, then add the remaining cheese.
  7. Cover and bake at 350°F (175°C) for 30 minutes.
  8. Uncover and bake for an additional 15 minutes.
  9. Let stand before serving.
  10. Serve with salsa, sour cream, black olives, chopped tomatoes, lettuce, or your favorite toppings.
