Enchilados are flavorful, cheesy Mexican-inspired rolled tortillas filled with seasoned ground beef and cheese, perfect for a comforting family dinner or casual gathering.

Ingredients

  • 1 lb. hamburger
  • 1 (16 oz.) can tomatoes
  • 1 (16 oz.) can tomato paste
  • 1 (1 1/4 oz.) pkg. chili mix
  • 1/2 cup water
  • 1 onion, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 cups Cheddar cheese, grated
  • 12 tortillas

Instructions

  1. Brown the hamburger in a skillet.
  2. Stir in the tomatoes, tomato paste, chili mix, water, chopped onion, salt, and pepper.
  3. Simmer the mixture for 10 minutes.
  4. Place a portion of the meat mixture and grated cheese in each tortilla and roll them up tightly.
  5. Arrange the rolled tortillas in a baking dish.
  6. Pour the remaining sauce over the assembled tortillas.
  7. Cover the dish tightly with foil.
  8. Bake at 375°F for 25 minutes.
  9. Sprinkle additional cheese on top before serving.
