Ingredients

  • 1 flank steak or round steak
  • 2 medium onions
  • 4 carrots
  • 6 medium to large potatoes
  • melted butter
  • salt

Instructions

  1. Remove all fat from the steak and cut it into 1 1/2 inch cubes.
  2. Place the steak cubes in a deep 3-quart casserole dish.
  3. Layer sliced onions over the steak, separated into rings.
  4. Sprinkle with salt and pepper, then add enough water to barely cover the meat.
  5. Cover the onions with sliced carrots and season with salt and pepper.
  6. Peel the potatoes and cut them into slices not too thin.
  7. Rinse the potato slices well and layer them on top of the carrots, sprinkling each layer with a little salt.
  8. Brush the top layer of potatoes with melted butter.
  9. Cover the dish and bake at 400°F for about 2 1/2 hours.
  10. If the top layer of potatoes begins to brown too much, cover loosely with foil during the last 30 minutes of baking.
