Ingredients

  • 1 cup mixed currants, raisins, yellow raisins
  • 1 cup citron fruit mix
  • 1 1/2 cups water
  • 3 1/2 cups flour, sifted
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • dash of cloves
  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease cookie sheets.
  3. In a saucepan, bring raisins, currants, citron fruit mix, and water to a boil.
  4. Reduce heat and simmer gently until all water is absorbed.
  5. Set aside and cool.
  6. Sift together flour, baking powder, baking soda, salt, cinnamon, and cloves.
  7. Cream shortening with sugar until light and fluffy.
  8. Add eggs, one at a time, beating well after each addition.
  9. Stir in vanilla.
  10. Add the dry ingredients gradually, mixing until just combined.
  11. Fold in the cooled fruit mixture.
  12. Drop spoonfuls of dough onto prepared cookie sheets.
  13. Bake in the preheated oven for 15 minutes or until golden brown.
  14. Remove from oven and cool on wire racks.
