  • 3 onions
  • 1 large ham hock
  • freshly ground pepper
  • 1 whole smoked sausage ring (optional)

Instructions

  2. Drain the soaked peas and place them in a large pot with 10 cups of water, along with the onions and ham hock.
  3. Bring the mixture to a boil, then reduce heat and simmer for 1.5 hours, stirring often.
  4. If the soup becomes too thick, gradually add small amounts of water to thin.
  5. Remove the ham hock from the soup.
  6. Season with salt and freshly ground pepper to taste.
  7. Add the smoked sausage ring to the soup and continue simmering for 15 minutes.

Tips & Substitutions

To enhance the flavor of your Erwtensoep, consider adding a bay leaf or thyme during simmering. If you want a vegetarian version, you can replace the ham hock with smoked paprika and a few chunks of carrots for added sweetness. Adjust the thickness by adding water gradually; the soup should be hearty but not too thick. For a twist, serve with a dollop of sour cream.

Serving Suggestions

Serve your Erwtensoep with crusty bread or rye for a complete meal. A sprinkle of fresh parsley on top adds color and freshness. This soup pairs beautifully with a side salad or pickled vegetables for a delightful contrast. For a heartier experience, consider serving alongside Pork Stuffing or any of your favorite pork recipes.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stovetop over low heat, adding a splash of water if it has thickened too much. You can also freeze the soup for up to 3 months; just be sure to cool it completely before freezing.
