Ingredients

  • 1 pint small oysters
  • 1/2 pound saltine crackers
  • 1/8 pound butter
  • 28 ounces milk
  • salt and pepper to taste

Instructions

  1. Butter a 2 1/2-quart casserole dish.
  2. Check oysters for shell pieces.
  3. Layer crushed saltine crackers, oysters, and butter in the casserole, making about 2 or 3 layers.
  4. Pour any oyster juice over the top.
  5. Scald the milk.
  6. Pour the hot milk over the layered ingredients.
  7. Bake in a hot oven at 400°F for 30 to 40 minutes.
  8. Insert a knife in the center; it should come out clean, like a custard pie.
  9. Serve hot.
